    2 Cups whole wheat flour
    1/2 teaspoon salt
    3 teaspoons baking powder
    2 beaten eggs (medium)
    1 cup 1% milk
    3 tablespoons brown sugar (not packed)
    2 tablespoons melted butter


Stir together the dry ingredients.
In seperate bowl, stir together the liquid ingredients.
Combine both sets of ingredients, mixing only until dry ingredients are moist.
Bake in greased or papered muffin tins for 20 minutes at 375 degrees.

  • I was looking for a quick whole wheat muffin to make using what I had in the house. I substituted in skim milk, sweet n low and light margarine. I also added some cinnamon. They are not overly sweet. They remind me of great corn bread. - 2/25/09
