Ingredients

    15 gold potatoes
    1 C. finely diced red onion
    2 oz. chopped pimentos
    1/3 C. dill pickle relish
    2 C. light mayonnaise
    4 hard boiled eggs chopped
    2 cans sliced olives
    4 tsp. yellow mustard
    fresh ground black pepper

Tips

I like to leave my potatoes slightly undercooked so that I have nice chunks to bite into.


Directions

Cook potatoes in a large pot with plenty of salt. Strain and let cool in colander until easy to handle. when potatoes are cool, dice them up and mix with all other ingredients in a mixing bowl. Refrigerate for a few hours to allow flavors to blend.
