Ingredients

Batter:
1 cup heart smart bisquick
2/3 cup buttermilk (add water to get the consistency you want after that)
2 T brown sugar (unpacked)
1/2 t vanilla extract
1/2 scoop vanilla whey protein
2 t cinnamon
Sauce:
1 1/4 c blueberries
1 t cinnamon
water to cover
splash of lemon juice (optional)
Tips
Serve four pancakes with half of the sauce as one portion for brunch. You could also use it as four servings as part of a larger breakfast. Mini pancakes could be fun too!
You can sweeten the berries instead of/in addition to the pancakes.
Use different fruit for the sauce!
Leave the fruit raw- or add into the batter as you pour it out onto the pan.
Add an egg if you want extra fat, fluffy pancakes.
Directions
Mix together all of the batter ingredients until smooth. Heat pan over medium heat, pour batter out in 1/4 cup increments.
Wash the blueberries and put on the stove with enough water to cover. Add the cinnamon and lemon juice, if using, cover, and bring to boil. Cover and reduce to simmer. When you get to your last two pancakes (no 7 and 8), take the lid off to let the sauce thicken up a little!
Serving Size: Makes 8 pancakes, calculated two servings for brunch!
