Introduction

Ingredients

    2 Boil in a Bag Brown Rice (makes 4 Cups)
    1 Green Pepper diced
    1 Red Pepper diced
    1 Yellow Pepper diced
    1 Small onion diced
    2 Tablespoons of I can't believe its not butter
    4 Eggs
    2 Tablespoon of Mrs Dash Fiesta Lime seasoning (if none you can use a mixture of Lime juice, cayenne, salt, pepper)
    1 Tablespoon of Dill weed.


Tips

If you want this with a little more flavor substitute water for chicken broth. If you want it a little sweeter, you can add chicken broth and coconut milk.


Directions

Make rice according to directions. Set aside.

Heat large skillet with lid to medium. Melt 1 Tablespoon of I can't believe its not Butter. Add onion and peppers. Saute about 3 mins. Put in large mixing bowl.

Scramble the eggs and cook until lightly done. (Should still be a little wet). Chop in large chuncks. Place in bowl with veggies and mix.

Melt another tablespoon of butter in skillet. Add rice and brown lightly for approximately 2 mins.

Add veggies and eggs to rice and mix. Sprinkle Mrs Dash over mixture and stir. Sprinkle Dill over mixture and stir.

Makes 7-8 one cup servings.
