    6 cups old-fashioned oats
    1 cup packed brown sugar
    4 teaspoons baking powder
    1 teaspoon salt
    4 egg whites
    2 cups skim milk
    1/2 cup unsweetened applesauce
    2 teaspoon vanilla extract
    2 cans (15 oz) sliced peaches in water, drained and chopped
    1 cup fresh or frozen blueberries


1. Preheat the oven to 350

2. Combine oats, brown sugar, baking powder and salt in a large bowl. In a separate bowl, whisk together the egg whites, applesauce, milk and vanilla. Add egg mixture to dry ingredients and stir until blended together. Let mixture stand for 5 minutes and then add the blueberries and peaches.

3. Spray an 9 x 13 baking dish with cooking spray and pour the oatmeal mixture into the dish, spreading it evenly. Bake uncovered at 350 for 35-40 minutes.
