Ingredients

    1lb pork tenderloin, cubed into bite-size pieces
    1 onion, coarsely chopped
    1 red pepper, coarsely chopped
    1 green pepper, coarsely chopped
    1/2 cup Light cream cheese
    1 tbsp thai green curry paste
    1/2 cup light coconut water
    1/2 cup water
    1cup snow peas
    2 cups hot cooked long-grain brown rice
    1/4 cup choppedcilantro

Directions

Heat large skillet sprayed with cooking spray on medium. Add pork; cook and stir for 4 mins. Add vegetables; cook 4-6 mins. Stirring constantly. Add next four ingredients; cook until cream cheese is melted. Bring just to a boil; then simmer on meduim-low for 8 mins. Stir frequently. Add snow peas and cook 2 minutes. Serve on rice and top with fresh cilantro.
