Introduction

This recipe doesn't actually contain couscous (though you could sub it for the bulgur no problem), but the name came about because I promised my hubby I'd make a couscous salad, only to discover that I was out of couscous...so I subbed bulgur and it turned out great! But since then, we've always called it Couscous Surprise. It's a great little side dish, and can easily be turned into a quick main dish--just add a can of rinsed/drained garbanzo beans and a handful of chopped cashews, or some chopped cooked chicken. Enjoy! Ingredients

    1 c. bulgur**
    1-1/2 c. boiling water
    1/2 tsp. sesame oil
    1/2 large onion, minced
    2 tomatoes, finely diced
    1 bunch cilantro, minced
    1 large carrot, peeled and finely diced
    2 large cloves garlic, minced
    salt and pepper to taste

Directions

Combine bulgur, boiling water, and sesame oil in medium bowl. Cover tightly and let sit about 30 minutes, till steamed and fluffy. Meanwhile, chop your veggies. When bulgur has absorbed all the water, fluff with a fork and then add remaining ingredients. Serve at room temperature, or chillled.


**If you use couscous, you only need to let it sit for about 5 minutes, instead of 30. Nutrition info was calculated with bulgur.
