Introduction

Vegetarian Curry with Chickpeas Vegetarian Curry with Chickpeas
Number of Servings: 4

Ingredients

    1 12oz can Chickpeas drained and rinsed
    1/2 head Cauliflower chopped, just the flowerettes
    3 carrots, chopped
    1.5 cups onions, chopped
    1 jar of your favorite curry sauce
    4 cups brown rice, cooked (I used left overs from the night before)

Tips

I had leftover rice from the night before so that shortened the cook time drastically. This would be wonderful over couscous or quinoa also.


Directions

Saute onions over med-high heat until they are tender. Add Carrots and cook until they are also tender. Add Cauliflower and the jar of sauce. Cook until everything is cooked through. Serve over rice.
