Introduction

This is a revised version of a recipe I already have posted. The last time it was too dry and the cheese was too hard so I changed it up a bit! This is a revised version of a recipe I already have posted. The last time it was too dry and the cheese was too hard so I changed it up a bit!
Number of Servings: 6

Ingredients

    3 Cups chopped broccoli
    1 Cup less sodium chicken broth
    8 oz. Reduced fat velveeta cheese
    3 servings (15 crackers) Ritz reduced fat crackers

Directions

Heat oven to 350.
In a 9x9 casserole dish, add the chopped broccoli and chicken broth.
Cook for 30 minutes, stirring after 15 minutes.
When broccoli is soft, add 8 oz. of velveeta and top with crushed crackers.
Cook an additional 15 minutes.
Makes 6 servings.

    Very Good
    Very good, very easy. I used low-sodium vegetable broth, raclette cheese grated fine, and water crackers which I smashed to make the crumbs. I can see how minced garlic would also give it a kick, but it was great as is. Bravo! - 7/5/08

    I really liked this but used bread crumbs flavored with garlic for the topping and crumbled mozza cheese. yumm! easy too - 5/4/08

    Very Good
    Really good, we need to figure out a way where the ritz dont get soggy. I normally dont like broccoli but this was an easy way for me to eat it. - 2/4/08
