Ingredients

1 cup orzo pasta, cooked per directions (i use tricolor)
4 servings of my quick roasted vegetables
2 cups crushed tomatoes with basil
1/3 cup sundried tomato
1 t red pepper flakes
8 oz chicken breast, cooked and diced
2 wedges laughing cow light mozzarella
(salt and pepper to taste)
not included: 2 T fresh herb of your choice
Directions
Cook the orzo per package instructions.
Heat the leftover veggies and crushed tomatoes with the red pepper flakes. Add in the laughing cow wedges and melt. Add in the hot orzo, sundried tomatoes, and toss in the chicken.
Add salt and pepper to taste, and 2 T herb of your choice (basil would be a good choice, but you can use whatever you like).
Serving Size: Makes 4 servings.
