Introduction

These delicious little “burger” style cakes are super good for you, taste great and can be a crowd pleaser. If you want to make them as appetizers, simply roll them into little “meatballs” and serve with a lime and cilantro spiked sour cream or better yet, guacamole. Ingredients

    •1 tsp smoked paprika (or regular if you don’t have smoked)
    •2 cans wild salmon, drained
    •1 large carrot, grated
    •˝ cup ground almonds
    •1 egg
    •2 oz of goat cheese
    •1 tbsp Kraft Miracle Whip - Light

Directions

Mash everything up together and form the mixture into 6 “burger like” patties and place them on a parchment lined (or oiled) cookie sheet. Move an oven rack to the highest setting and place the patties on low broil for approximately 10 minutes per side. Be gentle in flipping them, they can be a bit fragile. (You can also easily do these in a fry pan with some coconut oil - about 3 minutes a side on medium works well)
