Ingredients

Tofu, extra firm, 396 grams (1 package)
Rice Noodles, 2 cups (cooked, drained)
Broccoli, fresh, 1 cup, chopped
Olive Oil, 2 tbsp
Red Bell Peppers, 0.5 cup, chopped
Green Peppers, 0.5 cup, strips
Red Onions, chopped, 0.25 cup, chopped
Sesame Seeds, 1 tbsp
Garlic, 3 cloves
Kikkoman Lite Soy Sauce, 2 tbsp
Directions
1. Bring 4 cups water/low sodium vegetable broth to boil; Add noodles stirring 2 - 3 minutes until noodles are al dente; Rinse well in cold water to stop the cooking process.
2. Heat oil in large skillet; Stir-fry tofu about 5 minutes or until golden brown; Remove from oil and drain on paper towel-lined plate.
3. Add onion and garlic to skillet. Stir-fry over medium/high heat 2 to 3 minutes; add broccoli and peppers and stir-fry. Cover pan; cook 3 minutes or until vegetables are al dente.
4. Drain noodles well, add to skillet and stir to combine; Return tofu to skillet continue frying until noodles are coated and flavors are blended. Adjust seasonings as needed. Add soy sauce and garnish with fresh herbs.
5. Enjoy!
