    Rice noodles, 8oz
    Brown sugar, 1/4 cup
    Lime juice, 1/4 cup
    Soy sauce, 1/3 cup
    Peanut oil, 1tbsp
    Scallions, 3
    Garlic, 1 clove
    Unsalted dry-roasted peanuts, 1oz
    Firm tofu, 15oz [1 package]


You can use low sodium soy sauce if you want. This recipe is calculated with "light" tofu.


Soak noodles according to package instructions. Drain.
In a small bowl, whisk together brown sugar, lime juice, and soy sauce.
In a large nonstick skillet, heat oil over medium-high heat.
Add scallions and garlic and cook, stirring constantly, until fragrant (about 30 seconds).
Add noodles, [already prepared] tofu, and sauce to skillet. Cook, tossing constantly, until noodles are soft (about 1 minute).
Serve noodles with lime wedges, topped with cilantro and peanuts.
