Ingredients

    1/2 lb Ground Turkey or Lean Ground Beef
    1/2 med onion, chopped
    1/2 green pepper, chopped
    2c long grain white rice
    1 16 oz can tomato sauce
    1 16oz can diced tomatoes, undrained, or fresh
    1 16oz can dark red kidney beans, drained
    1 16oz can whole kernel corn, drained or fresh/frozen
    2 cups water
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp chile powder
    Salt, Pepper to taste

Tips

Can substitute lean ground beef for ground turkey or eliminate meat for vegetarian.
Reheats well. Also good wrapped in a tortilla.


Directions

In large skillet brown ground turkey or beef, drain fat. Add onion & cook until slightly soft. Add rice, tomato sauce, diced tomatoes, kidney beans, corn, green pepper, spices and water. Bring to boil. Reduce heat and cook until rice is done (about 20 min), stirring occasionally.
