Italian Pizza Muffins - great addition to any pasta meal! Italian Pizza Muffins - great addition to any pasta meal!Number of Servings: 12
Ingredients
-
2 Cups Flour
1 Cup Water
1 Egg (large)
1/2 - 3/4 Cup Cooked Pork Sausage
20 slices of Pepperoni
1 small can of mushrooms
1/2 - 3/4 cup grated parmesan cheese
1/2 cup mozzarella cheese
Onion Powder, Garlic Powder, and Italian Seasoning
2-3 Tbsp Olive Oil
Standard size cupcake pan (6 cakes).
Tips
The dry ingredients like spices are as you prefer. I put a dash in here and there... I'm so guilty of not having to measure mine out, I just go with it! These are best served warm -- the more cheese, they will be gooey. Don't cook too long! Only 12-15 minutes. They don't get very "golden brown" so make sure you keep a close check on them.
Anything else could be added to these -- peppers, onions, olives, whatever you choose. I'm the only veggie lover, so I make them to everyone else's tastes!
Directions
Start by cooking sausage thoroughly. Cut pepperoni slices in quarters. Let all the meat sit on a paper towel to drain all excess grease from it before adding to the mixture.
In bowl, lightly beat the egg, olive oil and add water. Slowly add in flour, stirring constantly to make sure mixture combines completely. It will begin to get a sticky, dough like consistency. Add in grated parmesan cheese and mozzarella. Then add in meats and mushroom --- all the while thoroughly stirring together.
The spices are as you think --- I never measure my spices and just add as I go. Some may like more than others, so do what you prefer!!
After everything is combined, preheat oven to 350 and prepare your muffin pans. I sprayed mine with regular non-stick vegetable oil. Cook for roughly 12-15 minutes.
