Introduction

Feel free to substitute whatever veggies you want! For example, mine has 3 mushrooms in it because that was what I had in the fridge! Feel free to substitute whatever veggies you want! For example, mine has 3 mushrooms in it because that was what I had in the fridge!

Ingredients

2 tsp sesame oil (or oil of your choice)
    1 garlic clove, chopped up
    3 mushrooms (or yknow, more)
    2.5 cups of broccoli, chopped
200g tofu (approx a quarter or third of a block)
    200g udon noodles
    1 tsp soy sauce

Tips

Blanche the broccoli first so it's not so hard.

This is a great recipe for dealing with those fridge remnants - that one pepper, that half an onion, whatever you have!

Directions

Start by heating the oil in the pan and sauteeing the garlic, veggies and tofu. Stir it around on a high heat for a few minutes. Turn the heat down a touch and throw in the noodles. Stir it all up for a few more minutes then toss in the soy sauce. Give it a final mix and serve! Super easy!
