Ingredients

500 grams chicken (3 medium breasts)
2 medium red peppers, large dice
6-12 cherry tomatoes
Pineapple (1/2 can chunks)
1/2 cup soy sauce
1 T brown sugar
3 t sliced fresh ginger root
Tips
Add onions if you like. Also, if you don't have skewers, you can wrap these in foil packets and cook for 20 minutes.
Directions
Prep:
Slice chicken breasts in half, and then in quarters. Mix together the soy sauce, brown sugar, ginger root, and juice from the pineapple to make a marinade. Soak the chicken for 45 minutes or longer, shaking or stirring occasionally for full coverage.
When ready to barbecue, thread four pieces of chicken onto each skewer, alternating with chunks of pepper, cherry tomatoes, and pineapple. Cook on the grill for 15-20 minutes or until the chicken is done.
