Ingredients

    1 boneless, skinless chicken breast
    Fat Free Cooking Spray, Butter Flavor
    1 (10oz) can diced tomatoes with green chiles
    1 (4.5 oz) can diced green chiles, undrained
    1 cup chopped onions
    1 cup chopped celery
    1 cup thinly sliced carrots
    1 tsp Garlic powder
    8 Corn Tortillas, medium (approx 6" dia)
    Crushed Red Pepper flakes, 1/4 tsp or less


Directions

Bake chicken breast in 425 degree oven for 15 minutes or until cooked through, shred with a fork.

While chicken is baking, cut onion, celery, and carrots.

In a skillet sprayed with non-fat cooking spray, combine chicken, tomatoes, and chiles; over medium-high heat; heat through.

In a separate skillet sprayed with non-fat cooking spray, combine onions, celery, carrots and garlic powder; stir-fry over med-high heat until carrots are tender-crisp.

Warm the tortillas until flexible; serve.

Makes 4 servings (2 tortillas each)

    Incredible!
    Wow! This is SOOoooooo Good! So fast and easy to make and delicious... my whole family ate it up! I will definitely make it again and maybe add a few more things like olives, & red peppers... but it is so yummy!!! I added the option of fat free sour cream and no one even really wanted it!
