Ingredients

-2 C. uncooked rice
-1/2 tsp. salt
-1 C. sliced button mushrooms
-2 tsp. cornstarch
-salt and pepper to taste
-1 lb. ground turkey
-1 tsp. dried Thyme
-1 C. beef broth
-Cooking spray
Directions
Cook rice according to package directions.
Meanwhile, mix turkey, salt and pepper (to taste). Shape into meatballs.
Spray lg. skillet with cooking spray and set pan over med-high heat. Add meatballs and cook until brown, turning frequently.
Add mushrooms, thyme, salt, 3/4 C. of broth and bring to boil.
Reduce heat to med., simmer until meatballs are cooked through.
Disolve cornstarch in remaining 1/4 C. broth. Add to pan and simmer one minute.
Serve over rice
