Introduction
This is a modified version of my mom's fabulous but unhealthy coffee cake. It still has quite a few calories but is a great reward on your splurge day without going completely overboard :) This is a modified version of my mom's fabulous but unhealthy coffee cake. Ingredients

1/2 c. unsweetened applesauce
1/2 c. sugar
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 egg
1/2 c. 2% milk
1/2 tsp. vanilla extract
--------------streusel--------------
3 tbs. margarine or butter
6 tbs. brown sugar
3 tbs. flour
1 1/2 tsp. cinnamon
Tips
If you want the streusel to be really creamy & sink in to the cake, then make as directed by completely melting the margarine.
If you'd prefer having the streusel crispier, then cut the margarine in instead of melting.
Directions
To make the cake batter:
Mix applesauce & sugar in mixer.
In a separate bowl combine flour, salt & baking powder also mixing thoroughly.
In another small bowl, beat the egg with the milk.
Alternating wet & dry ingredients, put everything in mixer while it's running on low speed.
Add vanilla extract.
Then spoon half of your batter into a 9'' round or square prepared. Set other half aside.
To make the streusel:
In a small bowl melt margarine & stir in the brown sugar, flour & cinnamon.
Then spoon half of the streusel on top of the batter in the pan.
Next, add the rest of your batter & top with the remaining streusel.
Bake at 350* for 25 minutes.
Serving Size: make 6 big servings
