Ingredients

    1 chopped onion
    1 lb ground beef
    2 cans black beans, low sodium
    1 can diced green chiles
    1 cup chopped tomato
    5 Tbsp sour cream
    10 corn tortillas
    4 Tbsp salsa
    1 cup shredded cheese
    1 Tbsp fat free milk

Directions

Preheat oven to 350 degrees.

Cook onion and ground beef in dutch oven. Once beef is browned, add chopped tomatoes, can chile, 3 TBSP sour cream, and taco seasoning.

Spray 9x13 inch pan with nonstick spray. Spread 5 tortillas on bottom.

Mix black beans, 2 Tbsp sour cream and salsa. Mash with a fork or use an "immersion" blender to mix the ingredients.

Spread bean mixture on tortillas, then layer the meat mixture, sprinkle 1/2 cup of the cheese, then layer the remaining 5 tortillas on the top. Brush the top tortillas with the milk, then sprinkle the remaining 1/2 cup of cheese over the top.

Cover with foil and cook for 30 minutes. Remove foil then cook another 10 minutes.
