Ingredients

    5 lbs Red Skin Potatoes, cleaned and cubed
    2 c light sour cream
    2 c mayo
    2 c shredded cheddar cheese
    4 Tbs (4 oz) Turkey Bacon Bits
    2 Tbs diced scallions

Tips

Can replace the scallions with chives


Directions

Clean, cube, and boil potatoes for 15 minutes

Mix sour cream and mayo

Drain potatoes and place into large bowl.

Add cheese, scallions, and bacon

Add dressing and mix well

Cover and chill until ready to serve

Serving Size: makes 12.5 - 1/4 lb servings
