Introduction

Ingredients

    2/3 cup cocoa powder
    1 3/4 cups whole grain flour
    1 cup brown sugar
    3/4 tsp espresso powder, optional
    1 tsp baking powder
    1 tsp baking soda
    3/4 tsp salt
    1 cup chocolate chips
    2 flaxseed eggs (mix 2 Tbsp flaxseeds with 6 Tbsp water to replace two eggs, let sit for 5 minutes before adding to recipe), or egg whites.
    1 Cup milk or milk substitute
    2 tsp vanilla
    2 tsp vinegar
    1/2 cup applesauce

Directions

Oven 400F. Prepare muffin pan with cooking spray or paper liners.

Whisk together dry ingredients, including brown sugar and chocolate chips.

Whisk flax eggs, milk, vanilla, and vinegar.

Add wet to dry and mix until just combined.

Add to muffin tin, fill 3/4 full. Bake 20-25 minutes.
