Ingredients

    1 Package McCormick Mild Taco Seasoning Packet (reduced sodium)
    4 1/2 to 5 lb Whole Chicken
    3 tbsp extra virgin olive oil
    3 tbsp chopped hatch green chile
    3 tbsp chopped white onion
    3 cloves garlic chopped

Directions

Remove gizzards and neck from the chicken body cavity and rinse the chicken out. Coat Chicken in olive oil. Coat chicken in 3/4 of taco seasoning. Pour the remainder of the packet in the cavity of the chicken. Stuff the chicken with all chopped ingredients. Allow to marinate for 1 hour. Cook in rotisserie cooker for 1 1/2 to 2 hours or until internal temperature reaches 180 degrees.
