Ingredients

In order of Use:
Extra Virgin Coconut Oil - 1/3 cup
A type of Sweetner (i.e. Sugar/Honey/Agave/Splenda/Truvia) equivalent to 1/2 cups of sugar
1 packet of Truvia Natural Sweetener
Mashed Banana - 1/2 cup plus 1 tbsp
Natural Vanilla Extract - 1/2 tsp
1 Medium Egg
Organic All-Purpose White Flour - 0.75 cup
Oats - 1/2 cup plus 2 tablespoons
Baking Soda - 1/8 tsp
Baking Powder - 1 tsp
Salt - 1/4 tsp
Chocolate Chips 1/3 cup plus 2 tbsp

Add flaxseed or walnuts
Oats may be omitted and approximately 1 cup of flour can be used instead
Directions
Preheat oven to 350
Mix coconut oil and sweetner plus truvia in a bowl with a hand mixer until "fluffy"
Add banana, egg, and vanilla extract and mix with hand mixer
In a separate bowl mix flour, oats, baking soda, baking powder, salt. (You may want to place the oats in a food processor and pulse to break down larger pieces before adding to the mixture)
Gradually combine the flour mixture to the wet mixture and add chocolate chips. Mix with hand mixer
Scoop out about a tablespoon of cookie dough onto a greased pan. Continue until no dough is left in the bowl and you have about 30 cookies.
Bake at 350 for 5-7 min. (cooking time varies from oven to oven and how soft you like your cookies. for softer cookies bake for shorter time and allow to cool on pan for 5 min. For crispier cookies allow to bake for longer and until golden brown on edges.)
