Ingredients

Bacon, 12 medium slices, diced, leave 4 pieces uncut
Onions, raw, 1 medium, diced
Carrots, raw, 4 medium, chopped
Chili powder, 1 tsp
Bell peppers, 2 medium, chopped
Worcestershire Sauce, 1 tbsp
Salsa, 1 cup
Ground beef, lean, 3 lbs
Egg, fresh, 3 large, beaten
Directions
Preheat oven to 350.
In a medium frying pan cook diced bacon over medium heat. When bacon is almost done add onion, carrots, and chili powder. Cook until onion become translucent and carrots are tender. Add bell pepper and cook until they start to soften, add Worcestershire and salsa. Remove from heat and allow to cool slightly.
In a large bowl combine ground beef, eggs, and vegetable mixture. Mix thoroughly.
Place mixture into baking dish, press into a loaf shape. Top loaf with remaining bacon slices. Bake for 1 hours or until internal temp reaches 160 degrees. Remove from oven and allow to rest for 15 minutes before slicing.
Makes 12 slices.
