Introduction

Number of Servings: 10

Ingredients

    2. 6 oz cans of Tuna
    1, 15 oz can of chick peas
    2 Tbs Dijon Mustard
    1 Tbs lemon Juice
    .5 onion chopped
    1 egg
    Tbs parsley
    salt and pepper
    1 Tbs butter
    a couple dashes of Tabasco
    .5 cup of Parmesan

Directions

1) in pan melt butter and saute the chopped onion until they are barely crunchy.
2) Mash the drained chickpeas
3) add the tuna,mustard,lemon,cooked onion,egg, parsley, salt, pepper, tabasco, and stir well.
4) pat out 10 medium patties and then coat with parmesan.
5)chill in the refrigerator for about an hour (optional) but it helps hold them together.
6) Spray nonstick pan with cooking spray and cook the patties for about 5 min on each side. (it works best if you turn often.
