Ingredients

    1 lb 99% lean ground turkey breast
    1 cup chopped onion
    6 mini bell peppers, chopped
    1 clove garlic
    1 can 365 Light Coconut Milk (canned)

    the following spices to taste (season the meat and the milk separately):

    curry powder
    turmeric
    cinnamon
    all spice
    coriander
    paprika
    cayenne pepper
    pepper
    salt

Directions

saute onion, garlic, and peppers together in a pan that has been sprayed with nonstick cooking spray. In the meantime, in a saucepan, heat your coconut milk and all the spices mixed in until a boil. Reduce heat and simmer.

Crumble turkey meat into onion/pepper mix and season with same set of spices as the milk. Cook until done.

Add turkey mixture to coconut milk mixture and cover; simmer for 10 minutes.

Serve a top spinach and any other favorite vegetables.
