Introduction

I love this salad, AND it is providing me with needed iron. I love this salad, AND it is providing me with needed iron.

Ingredients

    1 tsp Olive Oil
    1 tsp Italian Seasoning ( like they sprinkle on Olive oil for bread dipping at the Italian Restaurants)
    1 TBSP Pine Nuts
    1 tsp chopped garlic (fresh, or in a jar)
    2 cups baby spinach

Directions

Rinse and spin fresh baby spinach. If you don't have a salad spinner, pat the spinach dry with paper towels, Just to remove some of the excess water.

Heat Olive oil in a non-stick frying pan on medium high. Sprinkle oil with 1 tsp. Italian seasoning. (like the mix added to olive oil for bread dipping at the Italian restaurants)
Add pine nuts and stir to keep from burning.
As the pine nuts start to turn golden, add the garlic and cook for one minute.

Stir in the spinach, spreading leaves over the whole pan. Cover, and continue cooking for about 2 minutes. You want the spinach coated with seasonings, and slightly wilted.

This makes one serving.

I like to serve this with a chicken breast or spaghetti. It is also good for breakfast with a scrambled, fried, or poached egg. If I'm going to fry the egg, I use the fry pan I used for the spinach.
