Ingredients

    2 boneless, skinless chicken breast
    1/3 C Newman’s Own oil and vinegar salad dressing
    One package (8oz) turkey bacon, cut into small pieces
    4 C chicken broth
    1 C wild rice
    1 C finely chopped onions
    1 C diced carrots
    1 C diced celery
    2 oz chopped and toasted hazelnuts
    1/4 C dried cranberries or craisins
    salt and pepper to taste

Tips

all ingredients are added to the baking dish raw

take caution when toasting the hazelnuts, they scorch easily


Directions

1. Preheat oven to 350 degrees.

2. cut chicken into cubes and marinade chicken overnight in Newman’s Own dressing

3. combine chicken (including the marinade), turkey bacon, chicken broth, wild rice, onion, carrots and celery in a heavy baking dish. Cover and bake at 350 degrees for 30 min, uncover and bake an additional 60 min or until most of the liquid is absorbed.

4. Top with toasted hazelnuts and cranberries, bake an additional 5 min.
