Introduction

Ingredients

    2 Tbsp flour
    1/4 cup oil
    1 large onion, chopped
    1/4 cup chopped green onions
    2 cloves garlic, finely chopped
    1 large bell pepper, sliced
    1/2 packet of onion soup mix
    2 cups water
    2 cans dark red kidney beans
    1 &1/2 pounds smoked turkey sausage, sliced

Tips

The flour should be a nice nut brown color before you all the onions, garlic, and bell pepper. That's what's going to make this nice and thick.


Directions

In a heavy bottomed sauce pan, brown the flour in the oil to make a roux. Add onions, garlic and bell pepper. Saute until tender. Add soup mix, 2 cups water, beans and sausage. Stir and cook over medium heat for 30 minutes. Serve over rice.
