Lately I substitute quinoa for the rice to cut out the carbs, adding a more healthy alternative. It's still incredibly tasty though the rice addition makes the pattys hold better once it's cooked in the pan.

Ingredients

    1 15oz can Black Beans (Rinsed, drained, and mashed)
    1/2 c Roasted Red Peppers (Diced)
    1/2 c corn
    1 c rice (medium or short grain is best) cooked or quinoa (substitute same amount)
    1 tbsp cumin
    2 tsp garlic
    1 tbsp oregano
    1 tsp paprika
    bread crumbs (1/2 to 3/4 cups)
    2 tsp worcestershire sauce
    2 tsp hot sauce (Preferably not tabasco style-go for something like cholula's)
    salt and pepper to taste

Tips

Quinoa is substituted as a healthier alternative to rice, but the patties may not be as stable. You can use more bread crumbs and even a little egg yolk to help counter this-OR cook for longer in the pan, ensuring a good crust on all sides.


Directions

Cook the rice or quinoa as directions state. You will need 1 cup of cooked rice or quinoa.

Drain, rinse, and fully mash the black beans in a large bowl.
In a saute pan on medium heat, use 1 tbsp olive oil and saute the roasted red peppers and corn for 3-5 minutes until warmed and starting to brown slightly. Add all of the spices (dry), let heat for 1 minute then add the rice or quinoa, heating through fully for 2-3 minutes. Add the worcestershire and hot sauce to taste. Mix well and remove from the heat. Cool until you can handle.

Mix into the bowl with the mashed black beans and add the bread crumbs-you may need more than 1/2 cup-up to 3/4 cup. Season mixture with salt and pepper to taste.

Form patties- makes 6 decently sized patties.

In saute pan, place 1 tbsp oil and heat on medium-medium high. Place patty and heat, flipping to other side once bottom is crispy.

Serve on buns with tomato, lettuce, onion, and a blend of chipotle or cumin mixed with hot sauce in your mayonnaise. Serve immediately.

Serving Size: Makes 6 3.5-4inch patties
