Ingredients

    1 bag tyson fajita chicken strips
    2 green bell peppers, cut into strips
    2 red bell peppers, cut into strips
    2 medium onions, cut into strips
    2 tbsp olive oil (divided)
    1 box penne pasta (16 oz)
    1 can fat free evaporated milk
    2 tbsp chipotle sauce (or your favorite hot sauce)

Directions

cook pasta according to package directions.
while pasta is cooking, heat 1 tbsp olive oil to saute peppers and onions.
in a separate pan, heat the other tbsp olive oil to heat the chicken strips.
to make things simple, i generally saute the veggies and chicken for the same duration as the pasta boils, roughly 12 minutes.
while all items are cooking, whisk together 1 can of fat free evaporated milk and 2 tbsp of your favorite hot sauce. you can adjust the "heat" for your taste.
drain pasta and mix all ingredients together in pasta pot. stir well to coat. serve.....

makes 8 2-cup servings
extra special good as left overs, btw. =)

    this was phenomenal!! I cooked 1/2 box of pasta and mixed in some chili powder. I added the pasta, veggies, evaporated milk and chili powder to the pan with chicken to pick up the flavors. AWESOME AWESOME AWESOME My new favorite! - 1/16/10

    Terrible, but not the fault of the recipe person. I blame Tyson, the flavoring was terrible and I couldn't be in my house for hours after due to the terrible smell! I think doing this from scratch with chicken would work, but not with the ready strips! - 2/12/13
