Ingredients

    2/3 c chopped onion
    1/2 c chopped green pepper
    1-1/2 t dried oregano
    2 garlic cloves, minced
    1 t ground cumin
    1 t olive oil
    1 can (16 oz) kidney beans, rinsed and drained
    1 can (15-1/2 oz) great northern beans or black beans, rinsed and drained
    1 can (15 oz) pumpkin
    1 can (14-1/2 oz) chicken broth
    1/2 c water
    2 T brown sugar
    2 T chili powder
    1/2 t black pepper
    3 c cubed cooked turkey breast

Tips

This makes 8 servings. Great for freezing and on the go lunches. Ladle chili in individual sandwich or qt freezer bags), label and freeze. Thaw and reheat in microwave.


Directions

In large saucepan, saute the onion, pepper, oregano, garlic and cumin in olive oil until vegetables are tender. Stir in remaining ingredients. Bring to boil. Reduce heat and simmer for 1 hr.
