Ingredients

1 lb Spinach, frozen,
8 oz Mushrooms
1 bag (16 oz) artichoke quarters, frozen, Private selection steam select kroger,
Sauce
1/2 cup nonfat dry milk powder
1 cup water
1 tablesp Now Foods Guar Gum,
1/4 teasp Nutmeg, ground
2 slices Kraft 2% Pepperjack Cheese
1/4 teasp Pepper, black,
optional, additional diced jalopena peppers to taste
Directions
Slice mushrooms. Set aside.
Slice artichokes into small pieces and set aside.
Put spinach in a large glass pot with about 1 quart of water. Microwave until totally thawed. Cook 10 minutes more. Drain the spinach using a strainer. Return drained spinach to the pot.
While spinach is cooking put all the ingredients for the sauce in the food processor and blend until cheese is thoroughly mixed into the other ingredients and is smooth with no large lumps. Put sauce in a small pot. Add mushrooms and artichoke hearts. Cook, stirring constantly, over low heat until sauce thickens.
Add sauce and mushrooms and artichoke hearts to drained cooked spinach.
