Ingredients

    2 cups dried fava beans, skins peeled
    2 cups low sodium chicken broth or vegetable broth
    4 cups water
    1/2 tsp salt
    2 tsp ground black pepper
    1 T crushed red pepper flakes

Tips

At the market, look for dried fava beans with the skins already removed, as peeling the fava beans adds quite a bit of prep time.


Directions

1. Soak the fava beans in water 8 hours (overnight). Drain and rinse the fava beans after soaking.
2. In a pressure cooker, add the fava beans, water, and chicken broth and cook for 30 minutes. Beans will have dissolved.
3. Let the beans cool and then scrape off the top liquid. It will be a little bit gelatinous. Maybe someone can explain to me what this is. Add the beans to a different pot, and add the pepper, salt, and red pepper. Reheat for a few minutes, stirring occasionally.
5. Season to taste and serve.
