Ingredients

    1 large zucchini, peeled and grated
    1 large carrot, peeled and grated
    1 cup fresh tomato, chopped
    1 oz shredded cheddar cheese

Tips

-For a really attractive salad, use a spiral slicer to slice the carrots and zucchini

-To cut the calories even more, replace the cheddar with mozzarella

-Serve tossed with your favorite salad dressing (not included in calculations


Directions

After peeling and grating your carrot and zucchini, grate them finely and combine in a large bowl. Add chopped tomato and cheese.

Toss carefully to evenly distribute all ingredients.

Serve chilled.
