Ingredients

Flour, white, 2 cup
Baking Powder, 1.5 tsp
Baking Soda, 1.5 tsp
Salt, .25 tsp
Cinnamon, ground, 1 tbsp
Egg Beaters, 1/4 cup
Brown Sugar, 2/3 cup, packed
Apple Butter, 1/2 cup
Vanilla Extract, 1 tsp
Apple Cider 1/4 cup + 1 TBL
Greek Yogurt nonfat Plain 1/3 cup
*Sunsweet Lighter Bake (Butter & Oil Replacement), 1 tbsp
Powdered Sugar, 1/2 cup for rolling
Tips
Store in an airtight container. They are best warm, but delicious the next day too.
Directions
Preheat oven to 375 degrees and spray a mini muffin pan with cooking spray.
In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
In another large bowl, mix the egg, brown sugar, apple butter, vanilla extract, honey, apple cider, yogurt, and "Lighter Bake". Pour the wet ingredients into the dry ingredient mixture and fold in until just incorporated. Using a small cookie scoop, fill a 24-hole mini muffin pan with one scoop of the batter. Bake for approximately 9-10 minutes. While donut holes are still warm,(bordering on hot) Roll the donut hole in the powdered sugar to coat the sides and top. Serve warm or at room temperature. This makes 58 of the most perfect little donut holes.
