Ingredients

4 tbsp grapeseed oil (or any vegetable oil)
4 tbsp flour
1 cup skimmed milk
6 eggs
200g grated swiss cheese/emmental or any cheese you may like such as cheddar...
Salt & pepper
Tips
You can replace the cheese by anything else you may think of.
Also in the buttered dish I sprinkle a little bit of flour so it doesn't stick as much.
Directions
Turn the oven on to 200C degre.
Turn on low heat and in a saucepan put the oil with the flour.
Take away from heat and add the yolks. Put back on heat and add the milk, keep stiring (on low heat) until it thickens, then add the grated cheese. Keep stiring until it is thick enough then add salt & pepper and take away from heat.
In a separate dish, beat the egg whites to a hard texture.
Add the white to the mixture and put in a souffle buttered dish.
Put on the lower shelf in the oven for 20mns and on the last 5mns put the heat up to 220C degre.
It is ready once the top is golden. (once taken out from the oven it will go down a bit)
Serve with a green salad.
