Introduction

Number of Servings: 4

Ingredients

    Crust:
    1 cup whole wheat flour
    2 tsp baking powder
    3 tsp margarine, soft
    1/3 cup breadcrumbs
    ~1/3 cup water

    Filling:
    5 eggs
    1 cup 1% milk
    1 onion
    1 pepper
    5-6 mushrooms
    1/2 cup shredded low fat cheddar cheese

    Optional:
    1 cup spinach

Tips

You can exchange these vegetables for any of your favourites, but always be sure to keep the onion.


Directions

Prepare the crust a minimum of 2 hours in advance. Add dry ingredients and margarine together. Mix until you get a sandy consistency. Add water slowly until a ball forms easily. Place in fridge covered.

Roll out dough on floured surface to the size of your pie or casserole dish. Place in dish.

In frying pan, cook onion, pepper and mushrooms until tender. Optional: Add spinach and cook until wilted.

In a separate bowl break eggs. Mix in milk and beat until mixture is uniform (usually about 1 minute). Salt and pepper.

Place cooked veggies in pan and cover with the egg/milk mixture. It should be full to the edge of pan. Do not mix.

Add shredded cheese on top.

Place in 375 F oven for about 45 minutes. To make sure it is fully cooked, slide a knife in the quiche and remove it, if it is cooked no liquid will be on the knife.
