Introduction

My version of the skinnytaste recipe. My version of the skinnytaste recipe.
Number of Servings: 9

Ingredients

    5c Shredded zucchini (or a mix of green & yellow squash)
    1 small onion (grated)
    1/2 c. shredded carrots (about half of a large carrot)
    1 egg
    4 egg whites
    1/4c. olive oil
    1.5c. Heart Smart Bisquick
    2oz Pecorino Romano (grated)
    1 TB dried Parsley
    Salt & Pepper to taste

    I've also added mushrooms or whatever leftover veggies were in the fridge.


Tips

Its fantastic. I sometimes eat it for breakfast, even my 9mo old son LOVES it!


Directions

Preheat oven to 350. Mix all ingredients together in a large mixing bowl. Add mixture to a greased large (9x13) casserole and bake for 45-60min (or until toothpick comes out clean) Serve when cool.
