Introduction

Ingredients

    4 C. diced Butternut squash
    about 3-4 Tbl of brown sugar (more if you like more)
    1 C. potato flakes

Tips

I was thinking that it could have used a little more brown sugar.
The potato flakes are to absorb the moisture that kept forming so that the mock potatoes weren't runny.


Directions

Cook butternut squash until soft enough to mash with potato masher or mixer. Drain and then mash, adding brown sugar and potato flakes.
