Introduction

A dip I made with some things I had on hand. I loved it and wanted to remember it, so here it is. A dip I made with some things I had on hand. I loved it and wanted to remember it, so here it is.
Number of Servings: 1

Ingredients


    1 Cucumber (with peel)
    1 Avocado
    6 cherry Tomatoes (what I had on hand)
    Lime Juice, 1 wedge yields
    Spinach, fresh, .5 cup
    Garlic, 2 cloves (approx)
    Salt, .5 tsp (approx)
    Pepper, black, 1 tsp (approx)

Tips

Try it sometime with jalapeno and/or onion also.


Directions

Cut off the ends of the cucumber. Cut it in 4 or so pieces. Throw it in the food processor. Remove the seed and skin from the avocado. Throw it in the food processor. Rinse your tomatoes or tomato. Throw it in the food processor. Cut up a lime and squeeze in some juice. Add some garlic, salt and pepper. Process it all together. Taste it and add additional seasoning, if needed.

Serving Size: Makes 1 bowl (Should probably be 2 servings but I eat it all!)
