6 egg yolks
¼ cup truvia
pinch of salt
2 cups cream
1 cup coconut milk
*Optional- Vanilla extract, coconut extract, vanilla bean, coconut mana, almond butter,chocolate powder
If you have a sous vide machine, you can use it to make this much easier.
Simply mix all ingredients and place in a ziplock bag in a sous vide machine for 1 hr at 140 F. After, cool in an ice-bath and then either pour it into popsicle molds or use the ice cream maker.
Heat cream and coconut milk until hot, but not boiling.
Slowly pour the hot cream and milk over the yolk mixture, while whisking (to avoid the egg from beginning to cook).
Pour back into saucepan on low heat, until the mixture thickens just a bit (and will stick to the back of a wooden spoon). For me, it takes about 10-15 min.
Once cooled, either pour it into popsicle molds or into the ice cream maker.
