Introduction

My hack of a common Indian dish. Not super low calorie, but less than in a restaurant. My hack of a common Indian dish. Not super low calorie, but less than in a restaurant.
Number of Servings: 4

Ingredients

    1.5 TBS oil
    1/2 pound fresh paneer (cubed)
    3 cups chopped tomatoes
    3 cloves garlic
    1 inch grated fresh ginger
    1TBS sweet curry powder or mix of sweet and hot (or whatever mix of spices you like)
    pinch hot pepper flakes
    1/2 cup coconut milk

Tips

Serve with naan or rice. I sometimes make it and serve it with a flour tortilla that I have blackened a bit in top of the burner flame.


Directions

Heat oil in frying pan and fry paneer cubes until brown. Remove from pan. Add ginger and garlic to pan and let soften for a few minutes. Add spices and stir around until fragrant. Add tomatoes and cover, let cook until they have softened and become liquidy (15 minutes or so). Add Paneer back and heat gently. Add coconut milk, stir gently and heat through.
