Ingredients

    1 14 3/4 oz can red salmon (drain,clean & flake with fork)
    2 T lemon Juice
    1 1/2 T dijon mustard
    1/4 c dry panko breadcrumbs
    1/2 c finely diced onion or little less
    3 egg whites
    1 tsp Mrs Dash Lemon Pepper

Directions

clean all dark part and skin off the salmon, flake and add rest of the ingredients. Mix and make 4 patties. Spray pan lightly with olive oil and fry on both sides until golden brown 3 to 5 min a side

    used one can of salmon, boneless & skinless, and leftover salmon. Otherwise followed the recipe. turned out very good. - 2/7/08
