Introduction

Number of Servings: 4

Ingredients

    4-6 small portobello mushrooms, thinly sliced
    2 tbsp. dry white wine
    1 small onion chopped
    2 garlic cloves, minced
    2 ½ cups cashew cream (made from 1cup raw cashews)
    1 tsp. lemon juice
    ¼ tsp. onion powder
    ¼ tsp. garlic powder
    ¼ tsp. red pepper flakes
    1/8 tsp. nutmeg
    2 tbsp. nutritional yeast
    salt and pepper to taste

    1 recipe of homemade pasta (2 eggs 1c white flour 1 c semolina flour)
    600 g cooked shrimp

Tips

Leave out the shrimp and make your pasta with water instead of egg and you have a great vegan supper. It would probably be good with chopped broccoli or asparagus added.


Directions

Saute onions until starting to brown. Add mushrooms and garlic saute2-3 min. Deglaze with white wine then add all remaining ingredients. Bring slowly to boil until sauce thickens. Serve over freshly made pasta.
