Ingredients

2 cups cooked brown rice
2 Tbsp sesame seeds, toasted
1 Tbsp sesame oil
1/4 c. flax seeds
1/4 c. water
1.5 Tbsp low sodium wheat free tamari
1 tsp kosher salt
Directions
Soak 1/4 c. flax seeds in 1/4 water for 15-20 minutes
mix brown rice, sesame oil, flax seeds & water after soaking, and tamara in a food processor or blender until it forms a thick dough. It will be sticky and start to form a ball.
Sprinkle lightly with a gluten-free starch or flour and press onto a non-stick liner. Roll thin. Sprinkle with toasted sesame seeds and salt, using roller to press them in lightly
Score crackers (I use a pizza cutter) before baking
Bake at 350 degrees for 20-45 minutes (depending on thickness) until crackers are lightly browned and crisp. They should break apart at score lines and not be soft or bendable.
If they are not all done at the same time, I break off and pull out the baked ones and let the still soft ones continue to bake a bit longer. Don't let them burn!
