Ingredients

1/2 cup all purpose flour
3/4 cup whole wheat flour
1/2 cup ground flaxseed
1 cup rolled oats
1/4 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 rounded tsp cinnamon
1/2 tsp nutmeg
1 egg
1 egg white
3/4 cup 1% milk
1/4 cup maple syrup
1 tsp vanilla
3 ripe mashed bananas
Tips
These muffins came out sweeter than I expected. I think you could cut the brown sugar to 1/8 cup and keep the maple syrup the same and they would still be delicious!
Directions
Preheat the oven to 375 degrees and coat muffin tins with cooking spray.
Mix the dry ingredients (flour through nutmeg) in a large bowl.
Mix the egg through vanilla in a separate bowl. Stir the mashed bananas into the wet ingredients.
Pour the wet ingredients into the dry ingredients and stir just until blended.
Divide the batter between 15 muffins and bake for 17-20 minutes, until a toothpick inserted into the muffin comes out clean.
