Number of Servings: 1


    2 T olive oil
    2 large yellow onions-chopped
    1 1/2 c dried lentils-rinsed
    8 cups broth
    salt and pepper to taste


Can add a bay leaf or other herbs.


Heat oil in stock pot and add onions. Cook until slightly browned and sweet. Add all other ingredients and bring to a boil. Lower heat and simmer until lentils are soft.

Serving Size: makes 8-1 cup servings
